A New Cupcake for the New Year

It has been a week since I last posted, and for that I am sorry. I have been so busy….. I thought that with the start of the new year, life would continue at a slow, but steady pace. Boy was I wrong. Crazy as it may seem, I was thinking about cupcakes these last few days and came up with this great recipe for Coconut Cream Pie. I found this photo from Sweet Peony cakes and thought I’d show you what mine looked like, since we ate ours too quickly to take a photo. This cupcake has made my top 10 list. It was moist, delicious and pretty fantastic if you ask me. Here’s the recipe… I’ll post my top 10 personal favorites this week.

Coconut Cream Pie

1 box yellow cake mix
1 teaspoon coconut extract
3 eggs
1 cup half and half
1 cup shredded coconut
1/2 cup shredded coconut, toasted for garnish
Mix together cake mix, coconut extract, eggs and half and half. Add 1 cup shredded coconut to the batter. Fill paper liners 3/4 full.
Bake at 350 degrees for 15-18 minutes. Cupcakes are done when cake springs back when lightly touched. Remove from the oven and cool completely.
Frost with Vanilla buttercream frosting, flavored with coconut extract, and sprinkle with toasted coconut.
