3rd Runer Up…. Grandma’s Carrot Cookies by Trish Lewis

This recipe has so much flavor and is truly a masterpiece. Trish Lewis submitted her grandmother’s recipe much to her grandmother’s delight! And to my delight as well. Thank you Trish- for sharing such a great family recipe with us!

Trish said, “you know how your mother always says, ‘eat your vegetables?’ Well,these cookies have real carrots in thiem. so you can tryly have as many as you want! They are deceptively delicious! I got this recipe from my grandma. She always has treats for us and these were one of our favorites that she would bring to family gatherings. I enjoy baking when I have a tried and true recipe that is a family favorite. I called my grandma to ask her if I could submit this and she said, ‘for heaven’s sakes, YES!’ It was hilarious!”

Grandma’s Carrot Cookies
3/4 cup shortening
1 cup sugar
1 egg
1 teaspoon vanilla
1 cup cooked mashed carrots
2 cups flour
1 teaspoon salt
1 teaspoon baking powder
1/2 cup nuts if desired

Cream together shortening, sugar, egg and vanilla. Add carrots and sifted dry ingredients. Add nuts. Drop by teaspoon on cookie sheet. Bake at 375 degrees for 7-10 minutes. Cool and frost. (recipe below)

Frosting:
1/4 cup butter
1/2 teaspoon salt
1 teaspoon grated orange rind
4 cups sifted powdered sugar
1-5 tablespoons orange juice

Cream together all ingredients until smooth. Add more orange juice or powdered sugar to desired consistency.
