I’ve been dreaming about food again, and when I do, I tend to bake a whole lot. Unfortunatly, Brian has been traveling, so that leaves just me and the kids to enjoy. I have been freezing some of our treats to they will last much longer, and the temptation is not there to eat ourselves into oblivion.
Here’s a great cookie recipe, I thought it would be a great time to bake this one. Spring is on it’s way!
Citrus buttery cookies that are great for any bake sale, brunch or family gathering.
Only the crumbs will be left on this plate.
2 sticks butter, softened
1 cup sugar
3 egg yolks
Pinch of salt
2 tablespoons lemon zest
2 tablespoons orange zest
1 ½ teaspoon soda
1 ½ teaspoon lemon extract
3 tablespoons orange marmalade, melted
1-2 tablespoons lemonade concentrate, melted
2 1/2 cups flour
Cream the butter and sugar together. Add the egg yolks, orange zest, lemon and
orange zest and salt. Then add the soda and the lemon extract. Fold in the flour. Stir until combined. Form balls the size of walnuts. Chill dough balls for 1 hour in the refrigerator. Bake at 350 degrees for 8-10 minutes until the cookies are lightly golden. In the meantime, melt marmalade and lemonade concentrate together over medium heat. Remove cookies from oven, brushing with melted marmalade and lemonade
concentrate and cool completely.
