Happy National Blueberry Pie Day!


Are you kidding me? Really? I am totally loving these food holidays. I made a great blueberry pie (a good tart recipe too...) recipe and I wanted to share it with you. It's quick and easy and tastes delicious.

Easy Blueberry Pie

2 1/2 cups fresh blueberries
1/2 cup sugar
2 tablespoons flour
1/4 cup butter
1 lemon, zested
1 teaspoon lemon juice
1 unbaked 9 inch pie crust

To a large sauce pan add:
1 1/2 cups blueberries, sugar, flour, butter, lemon zest and lemon juice. Simmer for 10-15 minutes until thickened. Pour into unbaked pie shell and spread evenly. Bake at 350 degrees for 30 minutes, until crust is golden. Top warm pie with remaining blueberries and let cool completely before serving with a dolop of whipped cream.
