I have gotten several emails from you with ideas for cupcakes. They are fantastic! Even while I was attending a conference this weekend, my mind was overtaken by cupcakes.

The Campbell Clan sent these suggestions in to me via email.

Chocolate Pretzels
Bread Pudding
Sweet Potatoes
Huckleberry
Snow Cone
Kool-Aid
Skittle
Orange Julius

Here is a great recipe for a Ruby Red Grapefruit cupcake…So tasty.

Ruby Red Grapefruit

1 box yellow cake mix
3 eggs
3/4 cup buttermilk
2 tablespoons ruby red grapefruit zest
2 tablespoons ruby red grapefruit juice
Ruby Red Grapefruit buttercream frosting (recipe below)

Mix together cake mix, eggs, buttermilk, grapefruit zest and grapefruit juice. Scoop batter into paper liners and fill 3/4 full. Bake at 350 degrees for 12-15 minutes, until tops of cupcakes are light and golden. Remove from the oven and cool completely.

Ruby Red Grapefruit Buttercream Frosting
1/2 cup butter, softened
2 tablespoons ruby red grapefruit zest
2 tablespoons ruby red grapefruit juice
2 tablespoons of milk or more to desired consistency
1 lb. powdered sugar

Cream together butter, grapefruit zest and juice. Add powdered sugar and mix until completely combined. Add milk, 1 tablespoon at a time to desired consistency. Spread on top of cooled cupcakes.
