
I have a great meal you can make for National Cheese Day. Cheese really does make almost everything taste better. It's like butter in my opinion.
Gourmet Macaroni & Cheese
1 lb. pasta, cooked and drained
¼ cup butter
¼ cup flour
1 ½ cups milk
1 ½ cups chicken broth
3 cups cheese, grated (I suggest, baby swiss, monterey jack or smoked gruyere- a combination tastes good too.)
1 teaspoon salt
1 teaspoon black pepper
Dash of ground nutmeg
½ cup Italian breadcrumbs
In a medium saucepan, melt butter and add flour, cooking for 30 seconds. Whisk in chicken broth and milk. Bring to a simmer or until the white sauce comes to a desired thickness. Add seasonings and cheese. Allow cheese to melt. In a buttered dish, add pasta and pour cheese sauce over the top. Sprinkle breadcrumbs evenly and bake at 350 for 45 minutes, until nice and bubbly.
