I have “developed” Twilight themed cupcakes- fast, easy and gourmet! I made a bunch last night for our “GNO” birthday bash for Andrea & they were delicious. The movie was pretty good too… the best one so far. I only missed having “crazy” fans in our theatre. There was no one to make fun of.

Try these recipes- they are delicious. And if you are not a Twilight fan, make them anyway. You won’t be sorry you did. What TEAM is your favorite?

Blood Red Velvet Cupcakes with Sparkly Vanilla Buttercream Frosting

1 box Red Velvet cake mix
3 eggs
1/4 cup butter, soft
1/2 cup sour cream
1 teaspoon vanilla
Clean sugar glitter
Vanilla Buttercream frosting

Mix together cake mix, eggs, butter, sour cream and vanilla. Batter will be thick. Use cookie scoop to place batter into paper liners. Fill 3/4 full. Bake at 350 degrees for 12-15 minutes until cake springs back when lightly touched. Frost cooled cupcakes with vanilla buttercream frosting and top with sugar glitter.

Swiss Chocolate Cupcakes with Dark Chocolate Ganache and grated chocolate

1 box Swiss Chocolate cake mix
3 eggs
1 cup heavy cream
1 teaspoon vanilla
Chocolate ganache
Grated dark chocolate

Mix together cake mix, eggs, butter, cream and vanilla. Batter will be thick. Use cookie scoop to place batter into paper liners. Fill 3/4 full. Bake at 350 degrees for 12-15 minutes until cake springs back when lightly touched. Frost cooled cupcakes with chocolate ganache. Top with grated dark chocolate.

  1. Will you please make a Harry potter cupcake? Twilight was a great idea but a Harry potter themed cupcake would be amazing. Maybe like an intense chocolate and cherry. Just an idea. Please consider!!!!! Harry potter all the way!!!! 🙂
