National Strawberry Shortcake day… make this cupcake!

Strawberry shortcake says “SUMMER IS HERE!”

This cupcake recipe is heavenly…. make sure you have plenty of whipped cream for the top!

Strawberry Shortcake Cupcake

1 package white cake mix
2 eggs
1 cup whipping cream
1 teaspoon vanilla
¼ teaspoon salt
2 cups diced strawberries
2 tablespoons white sugar
1 recipe Whipped Cream

Add sugar to diced strawberries in a medium bowl. Stir and set aside. Combine cake
mix, eggs, whipping cream, vanilla and salt and beat until light and fluffy. Pour batter into paper liners and fill about 1-2 tablespoons full. Add 2 tablespoons of the strawberry mixture on top. Cover the strawberries with more batter to ¾ full. Save extra strawberries for garnish. Bake at 350 for 15-18 minutes or until the cake springs back when lightly touched. Allow cake to cool slightly before serving with Whipped Cream.
