
Strawberry shortcake says "SUMMER IS HERE!"
This cupcake recipe is heavenly.... make sure you have plenty of whipped cream for the top!

Strawberry Shortcake Cupcake
1 package white cake mix
2 eggs
1 cup whipping cream
1 teaspoon vanilla
¼ teaspoon salt
2 cups diced strawberries
2 tablespoons white sugar
1 recipe Whipped Cream
Add sugar to diced strawberries in a medium bowl. Stir and set aside. Combine cake
mix, eggs, whipping cream, vanilla and salt and beat until light and fluffy. Pour batter into paper liners and fill about 1-2 tablespoons full. Add 2 tablespoons of the strawberry mixture on top. Cover the strawberries with more batter to ¾ full. Save extra strawberries for garnish. Bake at 350 for 15-18 minutes or until the cake springs back when lightly touched. Allow cake to cool slightly before serving with Whipped Cream.
