Summer Recipe # 2- Corn and Black Bean Salsa

My kids will eat the whole dish of salsa in one sitting if I let them. They love the flavors and texture, and believe it or not, it’s great for them too! My little girl calls this salsa the “pretty salsa.” It will stay in the fridge for up to 5 days.

Corn and Black Bean Salsa

1 can black beans, rinsed and drained
1 can diced tomatoes with cilantro (or plain diced tomatoes) with juice
1 cup corn
2 tablespoons key lime juice
Salt to taste
1/3 cup diced red onion
1/4 cup chopped fresh cilantro

Mix all ingredients together and serve.
