Summer Recipe #3- A Day at the Beach Cupcakes

OK, so I’m cheating just a little. This recipe doesn’t come from the garden, but it’s perfect for summer parties.

For my daughters 9th birthday, she wanted a Beach Party. Complete with a pool, hot dogs, drinks, beach balls and “beach” themed cupcakes. She even went as far as to schedule the pool 5 months ago and tell me some time later. The party was fun!

A Day at The Beach Cupcakes

1 box white cake mix
3 eggs
1 1/2 cups sour cream
1 teaspoon vanilla extract
1 teaspoon lemon extract
Vanilla buttercream frosting
Gallon size plastic bag
Turbinado sugar, or raw sugar
Small drink umbrellas
Small beach decorations

Mix together the cake mix, eggs, sour cream, vanilla and lemon extracts. Scoop batter into paper lined baking cups. Bake at 350 degrees for 12-15 minutes, or until cupcakes are light golden in color and cake bounces back when lightly touched.

Remove from the oven and cool completely.

Fill frosting into plastic bad. Gently squish out air, and seal the bag. Cut a small piece off the bottom corner, and pipe frosting gently in a circular motion to make swirls. Dust with raw sugar and top with umbrellas, and small beach decorations.
