Summer Recipe #5- Egg White and Spinach Omelet

This is a favorite breakfast of mine. I have been able to go out and cut fresh spinach each morning.(I love my garden!) I have done it for almost a week strait, and I am not sick of it yet.

Egg White and Spinach Omelet
Serves 1

1 whole egg
2 egg whites
1 cup fresh spinach
Salt and pepper
2 tablespoons cheese(optional)
Olive oil

Heat olive oil in a large skillet. Whisk eggs together and pour into hot skillet. Season with salt and pepper. Gently bring in sides of eggs until firm,making a circle, then using your spatula, flip circle over. Add spinach to the middle with the cheese and fold circle of egg into half- it doesn’t have to be perfect. Remove (crescent shape omelet) from the skillet and place on a plate. Top with more cheese if you want- remember it has calcium, which you need to start the day right.

I like mine with some fresh pico de gallo, or dill from my herb garden.
