Yes, this is a lunch staple for me during the summer. It makes my mouth water- but let’s face the real facts. It’s pure deliciousness on a plate. Vine ripened tomatoes and sliced cheese, melted, with crispy bread- perfection. Try this recipe a.s.a.p. I’m gonna make some for dinner and a big tossed green salad this weekend.

Ultimate Grilled Cheese and Tomato Sandwich

1 cup Ricotta cheese
½ cup Parmesan cheese
Cheddar cheese slices
Tomato slices
French Bread or sourdough bread
Butter
Salt and pepper to taste

Layer cheeses in between bread- be generous!Add tomatoes. Sprinkle tomato with salt and pepper to taste. Butter the outside of bread. In a large skillet on medium heat, cook sandwiches butter side down until bread is golden and cheese is melted, flipping half way through.

  1. This is one of my favorite grilled cheese sandwiches, too, only I like a little thinly sliced onion on it too. Try it, it’s a New Jersey staple and soo good!
