Happy July! Happy Summer! Happy National Ice Cream Month!
This is my favorite homemade ice cream recipe. I got it from my BFF Ann… but of course I modified the recipe for my family. It’s delicious- lemon goodness. My brother licked the bowl clean, it was that good. Make it once, and you will make it again and again and again.
Lemon Ice Cream
2 qt. milk (whole or 2% tastes the best!)
1 cup heavy whipping cream
2 cups sugar
1 teaspoon lemon extract
Zest of 2 lemons
Juice of 2 lemons
Ice cream maker
In a large bowl, mix together milk, sugar, cream, extract and lemon zest. Pour mixture in the ice cream maker, while it is running and add juice just before placing lid on. When ice cream is thick, remove from the ice cream maker and serve immediately, or freeze in plastic container for firmer ice cream.
(I didn’t say it was low fat, but I did reduce the sugar content dramatically.)
