Chocolate trifle with ganache and kiwi

Good. Moist. AMAZING! Sinful chocolate. You can’t just have one. Here’s the recipe for those of you who need to make this cupcake N.O.W.

1 box dark chocolate fudge cake mix
1 (4 oz) instant chocolate pudding mix
3 eggs
1 cup heavy cream
1 teaspoon vanilla
Sliced kiwi (24 slices = about 5 kiwi)
Chocolate ganache

Mix together cake mix, pudding powder, eggs, cream and vanilla. batter will be very thick. Scoop batter into paper liners and fill 3/4 full. Bake at 350 degrees for 15-18 minutes, until cake springs back when lightly touched. Remove from the oven and cool on a wire rack. Slice kiwi and place slices on a paper towel to reduce moisture.

Chocolate Ganache

1 cup heavy cream
16 oz. semisweet chocolate chunks or chips

Heat cream in a small saucepan until almost simmering. Pour over chocolate and let stand for 2-3 minutes. Whisk together until completely incorporated. As the ganache cools, it will thicken. While the ganache is still spreadable, but thick, frost the cooled cupcakes and top with kiwi just before serving.
