Summer Recipe #10- Wonderful Watermelon Syrup



Did you know that watermelon has more lycopene per serving than a tomato? Were you aware that there is a National Watermelon Promotion Board?

Watermelon...
- is the lycopene leader among fresh fruits and vegetables.
- get's it's color from lycopene, an antioxident.
- is choesterol free.
- is virtually fat free.
- is very low low in sodium.
- is a natural hydrator. Watermelon is 92% water and a great way to make sure everyone is getting enough fluids.



Watermelon Syrup

4 cups pureed seedless watermelon
1 cup sugar

Place the pureed watermelon and sugar in a saucepan over medium heat and stir while bringing to a simmer. Adjust the heat to maintain simmer. Stirring occasionally, simmer until the mixture has reduced by one half in volume and becomes syrupy.

Remove from heat and place in a glass bowl or jar and cool. Cover and refrigerate until ready to serve. Keeps 5 days in the refrigerator. Makes 2 cups.

Serve over ice cream, angel food cake cupcakes, italian cream sodas, or other cocktails.
