Summer Recipe #8- Naan Pizza with Roasted Vegetables

Naan bread is great plain or loaded with creamy pesto sauce and roasted vegetables. Here is a link to the best Naan bread recipe I have found outside of the India Palace in Provo, Utah.

I made this Naan Pizza with lots of veggies, ricotta cheese, salt and pepper. IT. WAS. GREAT.

Naan Pizza

Naan bread
Pesto sauce
Ricotta cheese
1 cup grape tomatoes
1 onion, sliced
2 cups whole mushrooms, cleaned
1 cup zucchini, cut into chunks
Calamata olives
Any other vegetables like peppers, eggplant, broccoli, potatoes

Spread pesto sauce in a thin layer on top of cooked naan bread. Roast vegetables in 2 tablespoons olive oil on a baking sheet at 425 degrees for 15-20 minutes. Top naan bread with roasted vetetables, or raw vegetables if you want more of a bite to them. Using a small spoon, add ricotta cheese and salt and pepper to taste. Bake in your oven for 8-10 minutes at 450 degrees or until cheese melts and sauce is bubbly. Remove from the oven and serve immediatly. You can also grill the naan bread on medium. Be sure to oil your grill before cooking.
