This recipe is delicious- not your average potato recipe, that’s for sure. I make this all the time, and when I do, there is rarely anything left on the baking stone. I use baking stones a lot- I love the way they bake….. They are one of my favorite baking tools in the kitchen.
10-12 red potatoes or Yukon gold potatoes or whatever potatoes you have in your pantry
1 1/2 cups sharp cheddar cheese
1 onion, caramalized (optional)
1 cup cooked and crumbled bacon (optional)
1 cup grape tomatoes (optional)
Salt and pepper to taste
Boil the potatoes until fork tender. Remove from the water and place on an oiled baking sheed. With the bottom of a glass, smash potatoes until they split. Season with salt and pepper to taste. Top with cheese, bacon (optional but necessary in my home), grape tomatoes (also optional but necessary), and bacon! (optional for some)
Preheat oven to 450 degrees. Bake potatoes with toppings for 15 minutes or until cheese is melted and the potatoes edges are crispy. Delicious! Serve while hot.
