Yummo. What more can I say? These cupcakes are a hit every time I make them. And for those of you who have a book- the recipe is inside. For those of you who don’t, here it is.

Happy Baking!

1 box chocolate cake mix
3 eggs
1/2 cup vegetable oil
1 cup grated zucchini
1 teaspoon vanilla
1 cup chocolate chips

Mix together all ingredients well. Pour batter into paper liners and fill 3/4 full. Bake at 350 degrees for 15-18 minutes or until cake springs back when lightly touched. Cool completely, frost.

Variation: Add 1 tablespoon cinnamon to batter if desired.

  2. I love zucchini recipes and these look delish. I’m going to pretend I can taste one since I can’t–not because I can’t cook them, but because I have gestational diabetes and that would be a real no-no! 🙂 Maybe next summer?
