1 cup canned pumpkin
1 cup unsweetened applesauce
½ cup Agave nectar or ½ cup honey
1 cup whole wheat flour
1 teaspoon baking soda
1 ½ teaspoons pumpkin pie spice
3 cups quick oats
Cream together by hand the pumpkin, applesauce and Agave nectar or honey. Stir in
the flour, soda, spice, and the oats. With a small cookie scoop, drop dough onto a
lightly greased cookie sheet. Bake at 350 degrees for 12-15 minutes or until cookies
are set in the middle. Remove from the oven and allow cookies to cool completely on
a wire rack.
