I got this great email from Heather- she loves the cupcake cookbook ( so do I). Her brother was getting married and the bride wanted cupcakes (If I did it all over again, so would I). So, the bride picked out 6 different kinds from 101 Gourmet Cupcakes in 10 MInutes and Heather baked and baked and baked. Until 300 cupcakes were baked, decorated and ready for the reception! The cupcakes were a hit- so glad you are baking and finding success in the kitchen.
Here’s a link to the Chocolate Raspberry Trifle cupcake from the wedding ( but strawberries were used because Heather couldn’t find raspberries. I love to improvise- they look delicious.)
Here’s the Chocolate Raspberry Trife cupcake recipe…
1 chocolate cake mix
1- 4 oz. chocolate pudding powder
1/2 cup milk
1 recipe chocolate ganache
1 cup raspberries for garnish
Mix togehter cake mix, pudding powder, eggs, and milk. Batter will be thick. Scoop into paper liners and fill 3/4 full.
Bake at 350 degrees for 15-18 minutes or until cake springs back when lightly touched. Remove from the oven and cool on a wire rack.
Frost with chocolate ganache frosting and top with fresh raspberries. Whipped cream tastes good on them as well! 🙂
