Macey's Little Theatre Baking Class

Can you say, good times! It was certainly a good time being at the Macey's Little Theatre in Pleasant Grove, Utah. Emily and Cindy were great- they run the show... and the fantastic customers that came to the cupcake baking class were phenomenal! Just about 86 women attended, the room was full to capacity and more... There was a group of 30 youth that had signed up for the class, but didn't come. I honestly don't know where we would have put them. We made Strawberry Shortcake and Pina Colada cupcakes.... so tasty. I wanted everyone to be able to taste the cupcakes, but since there were so many people, we did a drawing for people to get a small plate of cupcakes. I had a great time, and answered great questions from the audience. Thank you to Maceys for inviting me to this great event, and I will be back on May 4th (Tuesday evening) at 7 pm for an encore... maybe I will make Key lime pie and Chocolate peanut butter cup cupcakes. What do you think?

German Chocolate Cupcakes... a new recipe!


German Chocolate Cupcakes.

I don't know why this recipe didn't make it into the book. I have so many recipes compiled now, that I think I could make 101 Gourmet Cupcakes 2! Here is a great recipe I made this last week. It's delicious, easy (as always) and so much fun to make for any party or just because. Coconut, caramel, dark chocolate and of course chocolate butter cream frosting. What more could you want? Maybe a tall glass of milk to go with it. Happy eating and Happy Baking!

German Chocolate Cupcakes

1 box german chocolate cake mix
3 eggs
1 cup milk
1 teaspoon vanilla
3/4 cup mini dark chocolate chips
2 cups toasted coconut
Chocolate buttercream frosting
Caramel ice cream topping

In a large bowl, combine chocolate cake mix, eggs, milk, vanilla and chocolate chips and mix until batter is moist and no large lumps are visable. Scoop batter into paper liners and fill 3/4 full. Bake at 350 degrees for 13-15 minutes, or until cake springs back when lightly touched. Remove cupcakes from oven and cool completely.

Frost in a swirling motion (see photo) and lightly press toasted coconut along bottom of frosting around the whole cupcake. Drizzle with caramel ice cream topping. Serve immediatly or keep in fridge, in an airtight container for upto 3 days. You can always freeze the cupcake before frosting in a freezer bag for up to 1 month.

SNEAK PEAK- 101 Gourmet Cookies for Everyone...

First, this photo was taken one week prior the photo shoot. These groceroes account for the 2nd trip to the grocery store (Winco, the cheapest place) to stock my kitchen to make the hundreds and hundreds of cookies needed for the photo shoot. As you can see, there were plenty of groceries, 13 bags infact, and a whopping $187.87 total!


I just had the chance to preview some of the photos for 101 Gourmet Cookies for Everyone. Can you say, YUMMY? As usual, my partner in crime, or photographer Marielle Hayes never ceases to amaze me with her talent. Yes, these photos look good enough to eat. I am so excited to share some with you today. 2nd Runner Up..... Snickerdoodles in-a-hurry by Stephanie Roach



This contest was harder to judge than I thought it would be! So many great recipes sumbitted.... Stephanie's was so tasty and easy. You all know how much time baking can call for, but this great recipe was so quick. Usually every pantry is stocked with the necessary items to make this cookie. Thank you Stephanie for submitting this recipe! I was worthy of any award....



Stephanie says, " I'm a stay at home mom of two children with special needs. I'm dedicating my life to helping them reach their potential in whatever way I can, including teaching them to cook and bake right alongside me. My six year old son especially enjoys baking with me and runs to get his apron everytime I get down my mixing bowl. It is so much fun to include my kids, and before long, I'll I'll have two great bakers who can bake for me!"

Snickerdoodles in-a hurry

2 cups baking mix
1 lg pkg instant vanilla pudding mix (5 oz)
1/4 cup vegetable oil
1/4 cup butter
2 eggs
1/2 cup sugar
1 teaspoon cinnamon

Preheat oven to 375 degrees. Combine baking mix, pudding, oil, butter, and eggs. Dough will be stiff. Combine granulated sugar and cinnamon. Roll dough into 1 1/2" balls. Roll balls in cinnamon sugar mixture. Place on a greased ccolie sheet and flatten slightly. Bake 9-11 minutes or until slightly golden on edges. Do not overbake.

Variation 1: Eliminate sugar and cinamon. Add 1 cup semi-sweet chocolate chips. Bake as directed.

Variation 2: Use chocolate pudding mix instead of vanilla and replace cinnamon and sugar with 1/2 cup powderd sugar. Bake as directed.

Epicurean Style...chic aprons

A while ago I found Epicurean Style, the cutest aprons around! Now since most of you don't have a talented seamstress for a sister-in-law, who made my cupcake apron... you can have Epicurean Style to make yours! (You can see my cute apron on all of my TV spots... or check out the link here.


I spoke with Brittney about the cute aprons, and with such a popular demand for "cupcake" themed aprons, she and her team are working on a cupcake apron! I will post it as soon as I get a look at it. After all, every girl needs a great apron! I believe it makes being in the kitchen that much better.... I have several, because I'd rather clean an apron, than clean my favorite shirt!

Ask my friends and neighbors, I wear aprons constantly. I've been seen doing carpool with my apron on, and now my kids are to the age where it slightly embarrases them. OH well! Their mom loves them!

3rd Runer Up.... Grandma's Carrot Cookies by Trish Lewis


This recipe has so much flavor and is truly a masterpiece. Trish Lewis submitted her grandmother's recipe much to her grandmother's delight! And to my delight as well. Thank you Trish- for sharing such a great family recipe with us!

Trish said, "you know how your mother always says, 'eat your vegetables?' Well,these cookies have real carrots in thiem. so you can tryly have as many as you want! They are deceptively delicious! I got this recipe from my grandma. She always has treats for us and these were one of our favorites that she would bring to family gatherings. I enjoy baking when I have a tried and true recipe that is a family favorite. I called my grandma to ask her if I could submit this and she said, 'for heaven's sakes, YES!' It was hilarious!"

Grandma's Carrot Cookies
3/4 cup shortening
1 cup sugar
1 egg
1 teaspoon vanilla
1 cup cooked mashed carrots
2 cups flour
1 teaspoon salt
1 teaspoon baking powder
1/2 cup nuts if desired

Cream together shortening, sugar, egg and vanilla. Add carrots and sifted dry ingredients. Add nuts. Drop by teaspoon on cookie sheet. Bake at 375 degrees for 7-10 minutes. Cool and frost. (recipe below)

Frosting:
1/4 cup butter
1/2 teaspoon salt
1 teaspoon grated orange rind
4 cups sifted powdered sugar
1-5 tablespoons orange juice

Cream together all ingredients until smooth. Add more orange juice or powdered sugar to desired consistency.

Behind the scenes at the photo shoot...

Here is a sneak peak of behind the scenes at the photo shoot this last Monday. Marielle Hayes is a fantastic photographer and I am honored to have her be a part of both of my books, and we decided that we should do something like this yearly! OK- so any ideas on the next book? I'm open for suggestions.

Thanks to Cedar Fort's PR "lady" Sheralyn Pratt, who took these great shots during the photo shoot... you can have a behind the scenes look at what it takes to do a photo shoot for a cookie cookbook. (technical difficulties- I wasn't able to open them.... I will work on them and post later. Sorry!)

Easiest recipe for dulce de leche..... EVER!


So, in this grand and glorious process of writing yet another cookbook, I had this great contest.... the winner gets their cookie recipe published in my cookbook...

Anyway, I needed to get a great recipe for dulce de leche. I wanted something quick and easy, did I say easy? YES. So I went on a search for "easy dulce de leche recipe." I love google. I can usually find what I need and more.

Easy Dulce de leche

2 cans sweetened condensed milk (low-fat works too!)
Lots of water
Crock pot

Place cans (without wrapper) on the bottome of the crock pot. Generously cover with water.(VERY IMPORTANT) Place lid on crock pot and turn on high setting until water starts to boil. Reduce heat to low and simmer 1-2 hours for thin dulce de leche or 3-4 hours for thick dulce de leche. Thick works best for filling cookies.

CAUTION: Cans can explode, and eagle brand does not recommend heating sweetened condended milk in their can, nor do I. Although it does taste rather good when done right.

Best Cookie Contest Winner Is....

First, I want to say thank you to all who entered the best cookie contest. I made every and tasted every recipe submitted.... which contributed to gaining a whopping 7 lbs. in the last 3 weeks. Now I that I have a break from baking so many cupcakes and cookies, I should be able to shake off that extra weight. I guess it's one of the draw back of writing cookbooks. I will be watching the Biggest Loser tonight and while doing so, I will be doing my pilates and weights. It will motivate me to be a little better in the exercise department. And now that all the hundreds of cookies are out of my house, I will be able not to eat them for breakfast because they are "oatmeal" or "fruit" or "vegetable" filled. :)

Interview with Rachelle J. Christensen, author of Wrong Number

First off, let me start this by saying, I loved this book. If you read my review, you will know why. If you haven't read my review, click here to read it now.

Not only is Rachelle beautiful, talented and a gifted writer, she is funny too. She has so much great information on her blog rachellewrites. Be sure to take a look!

Here's my interview with Rachelle.

Wendy: What inspired you wo write Wrong Number?

Rachelle: I wanted to enter a chapter into the first chapter contest at LDStorymakers in 2007. I came up with the first chapter of Wrong Number, it won second place, and then I went on to write the rest of the novel.

Wendy: What books and other authors have influenced your writing. Do you have a favorite author or book?

Rachelle: I read a variety of books from children to YA to adult. I really like a good romance, but nothing too detailed. I love romantic suspense! (haha) Sometimes I go through phases, so I don't have a certain author or book... I love Agatha Christie, Shannon Hale, Clair Poulson, Mitch Albom, and many more too. You can check out my goodreads. A favorite book of mine is Nine Coaches Waiting by Mary Stewart.

Wendy: Do you like to use an outline, or write by the seat of your pants?

Rachelle: For Wrong Number, I did have a very rough outline I used and was able to talk through a lot of ideas with my brother and his wife. I am trying to do better with outlining and I think it has helped me with my current projects. My outlines aren't set in stone, more like jumping off points for how I want my story to go.

Wendy: Where do you get your story ideas?

Rachelle: New stories come to me like a tickle in my brain, much like you said your baking recipes come to you in your dreams sometimes. I think.... hummm... that could make an interesting story if... I've also too been inspired by my dreams. So the ideas seem to come from all over at any time of day, whether it's at night right before bed with a sentance popping into my head. I just have to make sure I don't forget them!

Wendy: What's next for you?

Rachelle: I've got a few things I'm working on besides this lauch for Wrong Number. I just finished an inspirational romance called Wind Song, which I love! I also have my WIP called, Caller ID. We'll have to see what's next on the docket!

101 Gourmet Cookies... Perfectly Peanut Butter Cookie

I thought that after baking and baking and baking my cookie recipes this week, I'd share one with you. This one has become a favorite.... not only because it's easy and simple, but because it's delicious and not so bad for you. Granted that doesn't mean you can eat the whole batch, but it simply means that you can have a few and NOT feel guilty.

Perfectly Peanut Butter

2 cups natural peanut butter (not oily)
2 egg whites
1 cup sugar substitute or raw sugar

Preheat oven to 350 degrees. Combine all ingredients until well mixed. Use a cookie scoop to place dough evenly on a lightly greased baking sheet. Bake cookies for 8-10 minutes. Remove cookies from the oven a let stand on cookie sheet for 2 more minutes. Transfer cookies to a wire rack to cool completely. These cookies freeze well! :)

Book Review... Wrong Number by Rachelle J. Christensen

Most of you know that I LOVE to bake. Baking makes me so happy and I can't stand to not be creative in the kitchen. But my second LOVE is reading. It's hard to find extra time to read, so I make time to read. I just finished Wrong Number by Rachelle J. Christensen. I was lucky enough to receive an advanced copy. (P.S. I'm envolved with the Blog Tour book release and you can still enter to win the fabulous prizes. :)

When I started reading Wrong Number, I couldn't put it down. Aubree Stewart- the main character seemed so normal, like a friend next door. Someone who was experiencing a lot of the same things I've experienced in the work place, except the fact that she answers acell phone only to hear a man tell some details of a murder and then.... well, I don't want to give the plot away, but she finds her whole world torn apart, truths she has always known, become lies. Her determination and her love for her child take her though a journey where she learns to trust herself and others. "Things aren't always what they appear."


This book is fast paced, clean and exciting "who-done-it" that had me guessing the killer(s) until the last few pages. I stayed up late just to finish this book, and I never stay up late for anything.

I'm giving this book 4 1/2 stars! Rachelle did a great job and made me want more. She is working on another project, her WIP(work in progress) called, "Caller ID." I can't wait for it... Happy Reading & Baking, too!

101 Ways to Use Cookie Cutters

What can you do with cookie cutters?
(Of course these cupcake cookie cutters are my favorite!)

Studio 5 Party Ideas contributer Alisa Bangerter came up with 101 Ways to Use Cookie Cutters. ( I totally want to meet her and learn as much as I can from her. She is a wealth of knowledge.) I am going to make Star princess wands for my daughters' birthday party like the one she shows on this Studio 5 segment. These are some fantastic and easy ideas and cheap too! I wish I could say that these ideas were my own, but I'm so glad Alisa came up with them- and was willing to share with us... here are some of my favorite examples:

13. Tie cookie cutters together to make a garland for a holiday or spell a word.

29. Make crayon shapes. Simply wrap with foil and place on a cookie sheet. Place broken crayons inside and melt.

55. Use as a weight to hold bouquets of balloons. Coordinate the cutter for the holiday or event.

The possibilities are endless. Most of us have a collection of cookie cutters. Are they collecting dust? Take a look at this segment on Studio 5 and you will be surprised with what you can do with a simple cookie cutter. You might even come up with a new idea just by being inspired. Yummy Wedding cupcakes...

In January, I had the privlege to make some wedding cupcakes for a great couple! Scott and Rachelle are so fun, so young, and starting their life together! Their reception was magical, the atmosphere was incredible, the food, well delicious- I'm not just saying that because I am partial. There was some other things besides my cupcakes.


Scott insisted on having the Root Beer Float cupcakes, and with some convincing of his bride and nephew, we came to the decision of the R.B F cupcakes along with Key Lime Pie & Black Forrest- yummy. Here are some photos taken by Jill Oaks Photography- thanks Jill!
There were labels and so many tiers with fabric wrapped in between. The buffet table was beautiful. :)

Top 10 Things I've learned from Costco Book Signings

Costco is one of those places that you can never seem to get enough of. I seem to be there close to once a week, and throughout this "tour" of Costco with my book signings, sometimes 3x's a week. One week there were 4 trips to Costco up and down the wasatch front.

There are many things I have learned from Costco over this time. One night at Costco can be a learning experience, not just a great time meeting people. I complied this top ten list during a recent trip for a book signing. (I was laughing so much, I actually got more people to come and talk with me. ) Without further discussion, here is my Top 10 Things I've learned from Costco book signings!

10. Taking your wife to Costco on a Friday evening qualifies as a "cheap" date.

9. You will ALWAYS run into someone from your past. Hopefully it will be someone who is excited to see you.

8. Free lunch daily, from 11-1 pm, buffet menu differs day to day.

7. If you intend to be there longer than 1 hour, bring a scarf, gloves, hat, and wear 2 pairs of socks.

6. Bigger isn't always better ..... i.e., 5 lb. bag of chocolate chips, nacho cheese sauce, vegetable shortening, and ice cream. Come on! Go for the vegetables and lean meats! Don't forget your copy of the best cupcake cookbook EVER!

5. If you want to go into labor, walking around Costco for 2 hours while chasing your 2 year old and husband in tow can do it! (seriously?) No cart, just walking and grabbing onto anything available every 4 minutes.

4. It is NOT appropriate to wear short shorts, no matter how slim and trim you may be. It's just not. Enough said.

3. When a dirty old man tell you that he has written a book too, don't ask the subject matter. Resist the temptation and look for security.

2. Thinking you are the first one to ask for "cupcake samples" isn't so funny after the 100th time, but go ahead and laugh yourself silly anyway.

1. If you are sitting there long enough, a single man will come up to you and ask for your hand in marriage! (Happened 2x's actually.)

I had a great run with Costco signings. I learned a lot about the store, but mostly about myself. Thank you Costco for inviting me to come and participate in author signings. I hope we meet again soon, possibly with my new cookbook, 101 Gourmet Cookies due out in the fall! Happy Baking!



WinCo, how do I love thee?

Let me count the ways...

1. Each and every week I go and find more things my family loves, and lower prices than my usual place, Walmart. Our favorite cereal of the moment is Special K Fruit and Yogurt- only $2.39 a box! That is almost a savings of $1.00 a box- which saves me $10 a month!

2. The bulk section has me giddy like a school girl- I simply can believe the selection and the prices, have I said how much I love the prices? From rice flour to spelt flour to dried beans, to nuts of every kind. You'll find what you are looking for. And since I am creating my new cookbook, 101 Gourmet Cookies for Everyone, I have needed such items as blanched almonds, rice flour, potato starch, etc.
3. My favorite brand of cheese, yogurt and ice cream are sold there, but shhhhhh.... it's a secret (Tillimook) Don't tell anyone!

4. I can buy a week's worth of groceries, splurging a little and getting everything that I need in one place without trying to shop at different stores and come away with a huge cart full for around $75.00 or slightly more.
