Roasted Olive and Tomato Bruschetta

Looks delish? This little appetizer is fast, simple and savory. With only a few ingredients, making gourmet easy once again!

Roasted Olive and Tomato Bruschetta

1 loaf baguette bread, sliced and toasted
1 cup black olives
1 cup green olives
1 cup kalamata olives
2 cups grape tomatoes
6 garlic cloves
3 tablespoons olive oil
3 tablespoons Herbs de Provence (basically, equal portions of rosemary, basil, thyme)

Toss olives, tomatoes, garlic, olive oil and seasonings together and roast in a single layer at 425 degrees for 12-15 minutes, tomatoes will wrinkle. Cool roasted olive mixture enought to handle. Coarsly chop and spread on toasted baguette. Serve warm or room temperature.
