Chocolate Ganache stuffed cupcakes
Makes 24-28 cupcakes
1 box dark chocolate cake mix
1 tsp. vanilla extract
1 cup milk
1 recipe chocolate ganache (below)
1 recipe chocolate butter cream frosting (below)

First, make the ganache. Pour 1 cup simmering heavy cream over 12 oz. semi-sweet chocolate chips. Let sit for 2-3 minutes. Stir until combined. Set aside until ganache has thickened… but still scoopable. About 30 minutes.
Mix together cake mix, eggs, vanilla, and milk. The batter will be thick. Scoop batter into cupcake liners, filling 2/3 full. Next, take scoopable chocolate ganache and place 1 tbsp. of ganache into each center of cupcake batter, resting lightly on top.
Bake filled cupcakes for 12-15 minutes, until cake springs back when lightly touched.
Cool completely before frosting. Chocolate ganache will be a sweet surprise to everyone who takes a bite!
Chocolate Butter Cream Frosting
Makes approx. 3 cups of frosting
8 tbsp. (1 stick) butter, room temperature
3 ¾ cups powdered sugar, sifted
3-4 tbsp. milk or cream
2 tsp. vanilla extract
1/3 cup cocoa
Place the butter in a large mixing bowl. Beat until light and fluffy, about 30 seconds.
Stop the mixer before adding the cocoa and sugar or you will have a large mess to
clean up. Add the sugar, cocoa, 3 tablespoons milk (cream) and vanilla extract. Beat
frosting starting on slow speed and add up to 1 or more tablespoons of milk (cream) if
frosting to too thick.
