Guest Recipe- Chocolate Peanut Butter Stuffed Cookies

One word. WOW! I got this recipe this week from Holly- what a simple, yet tasty cookie! And it starts from a cake mix- totally my style these days. It only has 5 ingredients- is kid friendly, and only takes a few minutes to put together.

The result- soft chewy chocolatey peanut butter cookies- similar tasting to a Reeses Peanut Butter Cup. Great with a tall glass of cold milk.

Gather your kids around- give each one an assignment- and be sure to save yourself a cookie… they will be gone real fast!

Chocolate Peanut Butter Stuffed Cookies from Holly

1 box chocolate cake mix
1/3 cup oil
2 eggs

Combine these ingredients until well encorporated.

I used my mixer. And if you turn your mixer on and there is no power, check the power cord- it may not be plugged in.

The dough will be very thick. Set aside.

In a seperate bowl, mix together the filling.

1 1/4 c. Peanut butter
1 1/4 c. Powdered sugar

Place in a mixer or large bowl. If mixing by hand you may need to knead it in the end.

Once combined, form each set of dough into 3/4″ balls, I used my cookie scoop for even measuring. You will have about 21 balls of each kind.

Take your chocolate dough, flattening out between the palms of your hands.

Then place a scoop of peanut butter mixture into the middle.

Shape the side of the chocolate dough around the peanut butter filling, pinching ends to secure.

Then gently roll into a ball. Place on a cookie sheet. Repeat until all are done and formed.

Then flatten cookie with the base of a glass.

Bake 7 minutes at 350 degrees. Remove and allow to cool for a few minutes. Then transfer to a cooling rack. DO NOT OVERBAKE these cookies. They will become hard and crunchy.
