A little contest among friends, but a contest no less.

I WON the best dessert- I knew that I would be placed into the dessert category….. and I was proud that I was placed into the dessert category. I had fun with the topic of “any kind of berry.”
I made Triple Berry Cheesecake cake bites…..

Do you want the recipe? Well, you’ll have to wait until the book comes out! Just Kidding! It’s a new recipe, not even in the book. But a great recipe, so I will share it with you. In fact, I am catering a wedding in May- they asked for 500 of these and 500 of the cookies and cream! This wedding will be perfect, don’t you think? I wish I’d thought of this 11 years ago for my wedding.

Triple Berry Cheesecake cake bites

1 box white cake mix
3 eggs
1 tsp. vanilla extract
1 cup milk

Mix together cake mix, eggs, vanilla and milk. Batter will be thick. Pour into a greased 9×13 baking pan.

Bake at 350 degrees for 24-28 minutes, until cake springs back when lightly touched. Remove the cake from the oven and cool completely.

This is Cupcake. Whenever he smells or hears me start to bake, he stands on his back legs on the other side of the counter and watches the whole time. He must be taking private baking lessons, but either way, it’s nice to have company in the kitchen.

Once cooled, cut the cake into quarters.

Then remove one quarter at a time and slice off the golden parts of the cake. This will keep your cake “whiter” and “cleaner.”

Crumble the cake into a large mixing bowl.

Then add:

8 oz. softened cream cheese
1 cup triple berry frozen mix, thawed and squeezed dry
2 tbsp. sour cream or 2 tbsp. heavy whipping cream (*I prefer the sour cream)

With the back of a large spoon, mix together the crumbles and the add ins. The crumbles will start to form a thick “dough-like” consistency. Takes only a few minutes!

Use a small cookie scoop or a spoon to gather the right amount of “dough” and shape into a ball with your hands. Keep your hands clean, washing and drying several times during the rolling process.

Place balls onto wax paper or in my case, aluminum foil- I’m all out of wax paper, and place in the freezer for 20 minutes to harden.

Dipping the cake bites:

Melt 1 lb. of white candy coating or chocolate (follow the package directions), adding 2 tbsp. of vegetable oil and stirring to combine.

Take a fork and gently place a cake bite into the warm melting chocolate. Use a spoon to cover the top of the cake bite to coat evenly.

Then use the fork to remove the cake bite from the chocolate. Gently tap the fork to remove all the excess candy coating. Place the cake bite on the wax paper until candy coating hardens. Drizzle with melted white coating for garnish.

Makes 36-40 small cake bites.

I didnt make any for the hubby for Vday, but my little one’s birthday was this week and I did the normal cake and store bought frosting… they just don’t do it for me.
