A little contest among friends, but a contest no less.
I WON the best dessert- I knew that I would be placed into the dessert category….. and I was proud that I was placed into the dessert category. I had fun with the topic of “any kind of berry.”
I made Triple Berry Cheesecake cake bites…..
Do you want the recipe? Well, you’ll have to wait until the book comes out! Just Kidding! It’s a new recipe, not even in the book. But a great recipe, so I will share it with you. In fact, I am catering a wedding in May- they asked for 500 of these and 500 of the cookies and cream! This wedding will be perfect, don’t you think? I wish I’d thought of this 11 years ago for my wedding.
Triple Berry Cheesecake cake bites
1 box white cake mix
1 tsp. vanilla extract
1 cup milk
Mix together cake mix, eggs, vanilla and milk. Batter will be thick. Pour into a greased 9×13 baking pan.
Bake at 350 degrees for 24-28 minutes, until cake springs back when lightly touched. Remove the cake from the oven and cool completely.
Once cooled, cut the cake into quarters.
Crumble the cake into a large mixing bowl.
8 oz. softened cream cheese
1 cup triple berry frozen mix, thawed and squeezed dry
2 tbsp. sour cream or 2 tbsp. heavy whipping cream (*I prefer the sour cream)
With the back of a large spoon, mix together the crumbles and the add ins. The crumbles will start to form a thick “dough-like” consistency. Takes only a few minutes!
Use a small cookie scoop or a spoon to gather the right amount of “dough” and shape into a ball with your hands. Keep your hands clean, washing and drying several times during the rolling process.
Dipping the cake bites:
Melt 1 lb. of white candy coating or chocolate (follow the package directions), adding 2 tbsp. of vegetable oil and stirring to combine.
Take a fork and gently place a cake bite into the warm melting chocolate. Use a spoon to cover the top of the cake bite to coat evenly.
Makes 36-40 small cake bites.
