My sweet, adoring, fantastic husband decided to take it upon himself and volunteer his wife (me) to make and bring 8 dozen St. Patty’s Day cupcakes to a party. Couldn’t I just bring the soda?
So after much thought and deliberation, this is what I came up with. I have a reputation to keep. They were very cute, and very festive. I baked the Vanilla Pudding Poppy Seed, and the Chocolate Cinnamon cupcakes, both from 101 Gourmet Cupcakes in 10 Minutes. I used the Cream Cheese Frosting also from 101 Gourmet Cupcakes. (by the way, the book is rated #13 in the cake section on Amazon. It changes every day… but I am celebrating for the moment.)
Place the frosting into a plastic storage bag, and cut off the end. After getting a good grip, swirl the frosting onto the cooled cupcake.
Then I topped the cucpakes with green sprinkles, and a gold wrapped chocolate coin… Get it- pot of gold? Super fast and easy. I had all 96 cupcakes frosted in less than 30 minutes. Notice the AB patern the coins are placed in. Thank you to my brilliant son, Ethan for thinking they should have some sort of patern to them.
They look fantastic and tasted even better. These would be great for a St. Patty’s Day school party or for dessert to celebrate the luck of the Irish. There really is always a reason to bake.
