Themes. I’m digging themes. So I am going to theme this week “Slow-cooker” week. Every recipe is slow-cooker ready. And some weeks, every night needs to be slow-cooker night. Ever have one of those weeks?

2- White Grape Juice Chicken & Buttered Noodles with peas
3- Green Chili Pork with Corn Tortillas
4- Lemon Garlic Chicken
5- Classic Minestrone Soup
6- Sweet and Sour Meatballs & Rice
7- leftover night- trust me, you’ll need it after all of the food you’ve cooked this week.
6 chicken breasts or chicken tenderloins
2 cans cream of chicken or cream of mushroom soup
1 8oz package cream cheese, soft
1 can diced tomatoes, drained
1 small can diced green chilies
1 onion, diced
1 tbsp. cumin
Salt and pepper to taste
Place your chicken in a crock pot. If you don’t have these fantastic liners, I suggest you get them. In a seperate bowl, mix together soups cream cheese, tomatoes, chilies, onion, cumin and salt and pepper to taste. Pour soup mixture over the chicken in the crock pot. Cook on low for 6-8 hours or high for 4-5 hours. You can serve the chicken whole or shredded with sauce over rice. Yummy and super easy.
