With St. Patricks Day just around the corner, I thought I’d dedicate a week to Irish themed food. I haven’t lost my mind…. fish, potatoes, corn beef and cabbage all grace the menu for this week. Sometimes it’s good to think outside the 7 meals we typically create. Take on a challenge and make something new. Then always, a breakfast meal- made with love for my kids.

1- Corn Beef and Cabbage with Red Potatoes
2- Baked Salmon with Roasted Broccoli
3- Ultimate Smashed Potatoes & Green Salad
4- Coconut Tipapia and Rice
5- Salmon and Corn Chowder from Chef Bryan with Buttermilk Biscuits
6- Baked Potato Bar
7- Whole Wheat Banana Pancakes with Cheesy Eggs
Whole Wheat Banana Pancakes
1 box Lehi Roller Mill Heart Healthy Hotcake Mix
2 ripe bananas, smashed
Vegetable oil for cooking
Make the pancake mix as directed on the package. Add the smashed bananas and mix well. Allow the batter to sit for 5 minutes before cooking. Batter will be lumpy. Follow cooking directions on box for baking times. Serve warm with fresh berries and powdered sugar or your favorite syrup.
