Ginger Carrot Cake Cucpakes- Perfect for Spring

Super yummy, moist ginger carrot cupcakes from 101 Gourmet Cupcakes in 10 Minutes. I thought I’d share one of my favorite cupcakes for springtime. I found these great little carrot gummy candies from Oriental Trading. Go here to take a look and purchase. They add a special touch to your cupcake.

1 carrot cake mix
3 eggs
1 cup milk
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 teaspoon ginger
1 cup raisins (optional)
1 cup chopped walnuts (optional)

Mix together cake mix, eggs, milk, cinnamon, vanilla, ginger, raisins
(optional), and nuts (optional). Pour the batter into paper liners filling, ¾ full. Bake at 350 degrees for 15-18 minutes until cake springs back when lightly touched. Remove from oven and cool completely. Frost with desired frosting. To garnish, sprinkle lightly with ground cinnamon.

Vanilla Buttercream (Orange Cream Cheese Frosting is pictured.)
