Have mercy! Browned Butter Cupcakes……

Mercy! I’ve done it again. You see, I had a 1/2 batch of browned butter frosting left over from making the Browned Butter Crinkle cookies from 101 Gourmet Cookies for Everyone. And I couldn’t let it go to waste. So I created these little buttery cupcakes that literally melt in your mouth. Not too sweet, perfectly good cupcakes.

So without further words, and explanations, please try these new cupcakes. They are simply great.

Browned Butter Cupcakes

1 box yellow cake mix
3 eggs
1 cup milk
1 tsp. vanilla extract
1/2 cup browned butter

Brown your butter. In a medium skillet over medium heat, cook butter until it turns dark golden, almost too dark. Remove from the heat and cool.

Mix together cake mix, eggs, milk, vanilla and browned butter.

Scoop batter into paper liners, filling 3/4 full. Bake at 350 degrees for 12-15 minutes, until lightly golden and cake springs back when lightly touched. Remove from the oven and cool completely.

Top with browned butter frosting. *These cupcakes are so delicious warm- right out of the oven with the frosting, melting on top.
