New Recipe- Citrus Shortbread Cookies

Perfect for spring, these cookies are mouth watering, perfectly sweet…. and the glaze is amazing if I do say so myself.

Citrus Shortbread Cookies

3/4 lb. soft butter
2/3 cup sugar
2 1/3 cups flour
2 tbsp. orange zest
1 tsp. lemon extract

Cream together butter and sugar, orange zest and lemon extract.

Add flour, 1/2 cup at a time.

The cookie dough will become thicker and pull away from the sides of the bowl.

Take the dough and place on a large piece of parchment sheet or foil. Spread in a long line. Think “thick snake.”

Place in the freezer for 20 minutes to firm up.

Unroll and cut into 1/2-inch pieces and bake at 375 for 8-10 minutes. Cookies should be lightly golden when done. Do not over bake.

While cookies are cooling, make the glaze.

1/2 cup fresh orange juice
1/4 cup melted butter
Powdered sugar- until your desired consistency (approx. 2 cups)

Drizzle glaze on top of cooled cookies- and enjoy your sweet and delicious cookies!
