What’s for dinner this week?

I haven’t even begun to scratch the surface for delicious easy meals, so this week is a week of my favorites. A great topic. These meals are my all time favorites, which I would love to share with you. It was hard to narrow it down to only 7 meals, so I may repeat this theme again in the near future.

1- Chicken Picatta with Secret Mashed Potatoes
2- Sweet and Sour Meatballs with Rice
3- Tilapia and Avocado Tacos and Mexican Rice
4- Pumpkin Lasagna with Sweet Petite Peas
5- Burger Mac Bake (a childhood favorite)
6- Roasted Veggie Pizza
7- Lemon Grilled Chicken with Steak Potatoes & Grilled Asparagus

Chicken Picatta

6 chicken breasts, even thickness

2 cups chicken broth

2 tablespoons capers

2 lemons, thinly sliced

1 tablespoon lemon juice

½ cup flour

3 tablespoons olive oil

Salt and pepper to taste

Dredge the chicken breasts in the flour and salt and pepper to coat well. Heat

skillet with oil. Add chicken and brown on both sides. Remove chicken from

skillet and add chicken broth and lemon juice. Stir together and allow sauce to

thicken. Add lemon slices and capers. Return chicken to skillet to heat through.


Secret Mashed Potatoes

4 medium potatoes, peeled and diced

1 large cauliflower, washed and broken into 1 inch floret pieces

2-3 tablespoons milk

Salt and pepper

2 tablespoons butter

4 oz. cream cheese

1 cup grated cheese (optional)

Boil potatoes and cauliflower in 6-8 cups of water and 1 teaspoon salt. Boil for 20-25

minutes until tender. Drain water. Mash in mixer or by hand until desired consistency.

Add butter, milk, salt and pepper and cream cheese. Stir to combine.

Burger Mac Bake (a family favorite)

1 lb. lean ground beef

1 onion, diced

1 green pepper, diced

1 can tomato soup

1 can cream of mushroom soup

Salt and pepper to taste

1 ½ cups cheddar cheese, grated

1 lb. macaroni, cooked and drained


In a large skillet, brown meat, onion and pepper. Stir in soups, salt and pepper to

taste. Combine with cooked macaroni noodles and pour into a buttered casserole dish. Top

with cheese and bake 30 minutes until heated through and cheese is melting.
