I am certain I have lost my mind. Officially. Undeniably. Certifiably.
This week, I am showing you how to make a savory dinnertime cupcake. A meatloaf cupcake to be specific. Topped with your choice of mashed potatoes, mashed sweet potatoes, sprinkle of cheddar cheese, chives, drizzled with ketchup (my kids personal recommendation) or garnished with caramalized onions.
The rest of the menu is kid themed. Things my kids would choose any day of the week. All 6 hands raised in agreement. Sometimes having the kids agree is a good thing.
This week, you will be the rockstar- the hero in the kitchen. And hopefully, after all you have done, you won’t be the one doing the dishes. They will- as a way of thanking you for your hard work, self sacrifice, and time (little do they know it’s all easy as pie, or shall we say cupcake?)

Meatloaf Cupcakes makes 24 cupcake sized meatloafs
1 lb. lean gound beef
1 lb. lean ground turkey
1/2 cup finely diced onion
4 slices white bread, broken into small pieces
1/4 cup milk
Salt and pepper to taste
1/2 cup ketchup
Soak bread crumbs in milk in a large bowl for 5 minutes.
Much like how I top my cupcakes, I used a plastic freezer bag and filled it with the warm mashed potatoes and look! It’s like frosting! I prefered the caramalized onions and sweet potatoes. Sweet and savory…. Yummy!
Notice I practically licked my plate clean. Super good.
