My kids favorite breakfast.

I thought I’d share with you the best breakfast in our house right now. It’s commonly referred to as Egg Nest, Eggs and Toast, Eggs in the hole. Whatever you choose, it’s fast and delicious, and super easy to make. My smallest (she’s 5) loves to take the cookie cutter and cut the holes in the bread.

You will need:

Slices of white bread- we really like Sourdough.
Olive oil
Salt and pepper
Small round cookie cutter

Cut the bread with your cookie cutter. Making sure that you don’t cut the sides- keeping your nest in tact. Repeat until all your bread has been prepared.

Melt the butter and oil- 1 tbsp. butter and 2 tbsp. olive oil into the skillet over medium heat. Add the bread and you will start to smell heaven. Then crack one eggs, per hole and crack the center of the yolk. Season with salt and pepper. Cook approx. 2 minutes until golden brown.

At this point, it’s ready to be flipped. Gently flip over and let the other side cook. 1-2 minutes for a soft center and 3 minutes if you want it cooked completely.

I would suggest using a large skillet to cook these in. Sometimes, they are eaten as fast as I can cook them. And it’s better with the butter and oil- if your skillet get’s dry, then don’t be afraid to add more butter!

This is the final product. Hurry fast, take a peak before it’s gobbled up!
