What’s for dinner this week?

Dinnertime is like laundry, and cleaning, and carpooling. A never ending battle. Here’s a quick video- which I love and I can totally relate to.

I have a smile on my face, even after seeing that hundreds of times, even live last year… I just love Hilary Weeks! She is an entertainer and mom, and realistic. Let’s get back to business. What’s for dinner this week? I asked each of my family members (there are 5 of us) to pick their favorite meal and we will make one each night of the week. Then each child will assist in the preparation and clean-up. This is a hands on week. I am imagining less fighting, more helping, and lots of thank yous at the table. Well, one can hope, can’t she?

Miss A- Tamales & Rice (white rice)
Mr. E- Homemade Pizza
Miss C- Noodles and cheese sauce (translation: Tuna Noodle Casserole to be exact)
Dad- Alabama Chicken and Smashed Potatoes
Mom- Steak with Balsamic Mushroom Sauce (do you like that I am the fancy one?)

Homemade Pizza

Authentic Pizza Crust

1 ¾ cups warm water

4 cups flour

1 tablespoon instant yeast

2 teaspoon salt

Mix water, salt, yeast in a large bowl. Blend in two cups of flour and blend until incorporated. Add the other 2 cups of flour a portion at a time. Mix dough until it becomes no longer sticky. Clean bowl and grease with olive oil. Return the dough into the bowl and allow dough to rise for about 1 hour or until doubled. Spread over pizza stone and top with favorite toppings. Bake at 450 for 10-15 minutes until cheese is golden and crust is done.

*The key here is to bake your pizza really hot…… and our favorite toppings are olives, pepperoni, mushrooms, tomatoes, spinach, red onions, feta cheese, Parmesan cheese, and Mozzarella cheese.
