After a week of preparing 500 cake bites, soccer and football games and practices, and then the cake bite photo shoot I am ready for take out and no dishes… But, because I am not wanting the grease and calories when you order take out, I will just settle for paper plates. So, what’s for dinner this week? I am thinking a lot of crock pot meals- with leftovers, and easy cleanup. Some one dish wonders too…. how about you?
Monday- Sloppy Joes & Home Fries
Tuesday- White Grape Juice Chicken & Rice
Wednesday- Skillet Beans and Rice with Ham
Thursday- Slow Cooker Lasagna with Garlic bread and salad
Friday- German Pancakes with bacon and Banana smoothies
Saturday- Grilled Lemon Chicken with Cheesy Noodles
Sunday- Burgundy Pot Roast with mushrooms and Mashed Potatoes
2 lbs ground beef or turkey or a mixture of both
1/2 medium onion, minced
Salt and pepper to taste
3 tbsp. tomato paste
2 tbsp. brown sugar
2 tbsp. red wine vinegar
1 tbsp. Worchestershire sauce
6 hamburger buns
In a skillet over medium heat, cook meat until light brown and crumbly. Add onion and stir. Cook for 2-3 minutes until onion is translucent. Add tomato paste, brown sugar, vinegar, and Worchestershire sauce.
Stir to combine, and allow mixture to simmer for 5-6 minutes. Season with salt and pepper. Top warm buns with a scoop of meat mixture. If you are really daring, add a slice of cheddar cheese.
Skillet Beans & Rice with ham
1 small onion, diced
2 cups Calrose or Long Grain white rice
1 tbsp. Lawry’s Season Salt
1 tsp. cumin
1 lb. cooked ham, cubed
4 cups water
1 16 oz. black beans, rinsed and drained
In a medium skillet with a lid, cook onion in 1 tbsp. olive oil until translucent. Add rice and seasonings, stirring to coat rice with oil. Cook for 2-3 minutes until fragrant. Add ham and water. Bring pot to a boil. Add black beans and stir- cover and reduce heat to low. Cook covered for 25-30 minutes. Serve with sour cream or salsa.
