Even I struggle at times to come up with a menu. Sometimes it seems that each member in our family is going a different direction…. but no matter what we have planned, dinner time is special and we try to all sit down, even if for a few moments to see the white of each others’ eyes. It does wonders for my soul. And sometimes you have your daughter fall asleep while you are making dinner….. and miss is all together.
For this week, I am doing another theme… where each night is still the way I set out here. I am in the mood for simple, easy meals- with only a few ingredients.
Monday- Pulled Pork Burritos with Lime and fresh tortillas
Tuesday- Cranberry Chicken with Salty Baked Potatoes
Wednesday- Creamy Lemon Pasta with green beans
Thursday- Chinese Noodles
Friday- Whole Wheat Waffles with fresh fruit and cream
Saturday- BBQ Mahi Mahi with cilantro lime yogurt sauce
Sunday- open for leftovers or dinner with family
4 C. Cooked Spaghetti or Angel Hair pasta
2 Celery Stalks, roughly chopped
1 Onion, Sliced
2 Carrots, peeled and roughly chopped
½ C. Peanut butter
½ C. Sesame Salad Dressing
2 Tbsp. Soy sauce
2 C. Broccoli Florets
2 C. Cooked Chicken, cubed
In a large skillet, sauté onions, celery and carrots until tender crisp. Add Chicken and broccoli and sauté for 2-3 more minutes. Add peanut butter, salad dressing and soy sauce and stir. When combined well, add the cooked pasta and heat through.
