Chicken Curry Salad


This salad is a keeper. It’s the perfect pot luck salad, baby shower main dish, or side dish to any BBQ. We love it!

2 chicken breasts, cooked and diced

¼ cup mayonnaise

¼ cup green onion slices

2 tablespoons craisins

2 tablespoon roasted almond slices or slivered

1 teaspoon curry powder

2 cups baby spinach (optional)

1 lb. cooked pasta, like Penne or Rigatoni (as pictured)

Salt and pepper to taste


Mix all ingredients together. Allow salad to marinate in the refrigerator overnight or at least several hours. Serve on rolls or with crackers. * when serving with pasta and spinach, do not serve on rolls.
