What’s for dinner this week?

This week has me super excited. My kids and I planned the menu together. It gave them something to do now that summer is in full swing. Even though they helped plan the organize the meals, I still went to the grocery store A.L.O.N.E. It’s easier that way, and I don’t seem to purchase things not on the list. Go figure.

Monday- Orange BBQ Chicken Sandwich, roasted broccoli, tater tots
Tuesday- Fish Tacos with fresh pico de gallo and tortilla chips
Wednesday- Whole Wheat Banana Pancakes & Fresh fruit
Thursday- Tuna Noodle Casserole
Friday- Roasted Veggie Pizza
Saturday- Leftovers
Sunday- Perfect Pot Roast

We have a schedule with each day as to who is helping in the kitchen. Should be fun!

Orange BBQ Chicken Sandwich

4 lbs chicken breasts, frozen or thawed
1 cup honey BBQ sauce
1 cup orange marmalade

1 pkg. onion soup mix

Place all ingredients into your crock pot. I always use the crock pot liners. Cover and cook on low for 6 hours. Shred chicken and add back to the sauce. Keep warm. Serve over toasted buns. Serves 8. The leftovers freeze really well.
