Harry Potter Cupcakes- 101 Gourmet Cupcakes style


Here it is... after inspiration from you- my version of the perfect Harry Potter Cupcake. Let's talk about how delicious it really is. Spicy pumpkin cake, with a pumpkin custard filling. Topped with rich cream cheese frosting, butter beer caramel glaze, and last but not least, a white chocolate lightening bolt, covered in gold edible glitter.

The recipe made 36 cupcakes, which is a big batch for my cupcakes, but perfect for a HP themed party. The most time consuming part was filling the cupcakes with the pumpkin custard filling. Sinful.... amazing.... rich.... creamy. Everything a cupcake should be.

 

Can you see custard coming out of this cupcake? I stuffed it a little fuller than the rest, but loved the way it looked.... depth, dimension... a sneak peak as to what you will get when you take a bite.

Pumpkin Juice Cupcakes with cream cheese frosting, butter beer caramel glaze- 101 Gourmet Cupcakes style (by Wendy Paul)

1 box spice cake mix
1 cup pumpkin puree plus 1/2 cup for custard
3 eggs
1 cup milk
1 tsp. vanilla extract
3 Tbsp. Birds Custard Powder
6 Tbsp. sugar
2 1/2 cups milk
1/2 tsp. ground cloves
1/2 tsp. ginger
1/2 tsp. nutmeg
1 recipe Cream Cheese Frosting
3/4 cup prepared caramel sauce
2 tsp. rum extract
Gold edible glitter
White chocolate candy melt

Preheat your oven to 350 degrees. Mix together cake mix, 1 cup pumpkin puree, eggs, milk, and vanilla extract. The batter will be thick. Scoop batter into paper liners, filling 3/4 full. Bake for 13-15 minutes until cake springs back when lightly touched. Remove from the oven and cool completely.

In the meantime, prepare your custard. In a medium saucepan, whisk together sugar and Birds Custard Powder. Add milk and stir over medium heat until no bumps. Continue stirring over medium heat until your mixture starts to thicken and boil. Remove from the heat and fold in the pumpkin puree and seasonings. Let stand, covered until reaches room temperature.

To make the lightening bolt, use a sheet of parchment paper- warm your white chocolate and pipe onto the parchment paper making a lightening bolt shape. Cover with gold edible glitter before it hardens. Repeat until you have enough for your cupcakes. Let sit until ready to use.

Cut out your cupcake center and place 1 tbsp. custard filling inside. Top with the cake you removed. Frost with your cream cheese frosting, and drizzle with the caramel sauce and rum extract mixed together. Top with your lightening bolt. You are done and ready to party, or eat, or celebrate the final chapter of the HP series.
