Hey all you Smore fans! I’ve taken the liberty of designating the month of July, Smore month. I am featuring my favorite Smore recipes, starting with this great Smore cookie bar. Smore Cookie Bar
1/2 cup or 1 stick butter, soft
1/2 cup sugar
1 tsp. vanilla
3/4 cup crushed graham crackers
1 1/2 cup flour
1 tsp. baking powder
3 cups milk chocolate or semi sweet chocolate chips
4 cups mini marshmallows
Preheat your oven to 350 degrees. Butter a 8×8 baking pan.
In a seperate bowl, combine butter and sugar- mixing until light and fluffy. Add egg and vanilla. In a seperate bowl, mix together graham crackers, flour and baking powder. Gently mix together dry ingredients with wet until combined. Press half of the dough into the greased 8×8 pan. Bake for 12-15 minutes until lightly golden.
Remove from the oven and layer with chocolate chips, marshmallows and remaining dough crumbles. Bake another 10-12 minutes, until melted and dough is lightly browned.
Remove from the oven and cool completely. ( I put mine in the fridge for 30 minutes after cooling to room temperature. It seems to cut easier after being chilled.) Cut into 16 servings.
