Cookies & Cream Cake

Not only do I enjoy baking cookies, cake bites and cupcakes… I enjoy baking cakes. Real honest to goodness cakes. I will not profess to be a cake decorator, but I am a cake connoisseur. My daughter requested a cookies and cream cake for her birthday this year, and I am still guessing as to why she didn’t choose cupcakes or cake bites. It turned out very much a cookies and cream overload, but she was super happy with the end result- even helping in the decorating process.
I used the basic Cookies and Cream Dream recipe from 101 Gourmet Cupcakes, and made it a whole cake instead of individual cupcakes. I adjusted the baking time to about 25-27 minutes.

Let your cake cool completely. And a little trick… I put the cake into the freezer to make it easier to cut.

Frost with your basic vanilla butter cream frosting, and top with crushed Oreo cookies, and of course fudge sauce.

The more fudge sauce, the better in my opinion. It made for a tasty rich cake. My mouth is watering already.

Then repeat the layers… we ended up with 4 layers. This cake is so moist, it sometimes felt like it would fall over. You can put it in the freezer or fridge to harden, this is also a great trick…

Then for the last layer of cookies, I left them whole and circled the outside perimeter for show… and then topped it with more fudge sauce.

And Miss A insisted of candles, and these little star balloons which I am sure are as old as I am. I remember having them on my birthday cakes as a little girl.

Happy Baking!
