Fish Tacos

This recipe is my favorite go to for a quick healthy meal. The ingredients can vary depending on what I have in my fridge.
Today I had:
Corn Tortillas
Limes
Breakfast radishes
Tilapia
Cilantro
Sour Cream
Zucchini
With the radishes and zucchini I made a slaw- and tossed in some salt and pepper and a splash of vinegar. Then set aside.

I think this is my new favorite spot in my kitchen…. my old red side table. It’s perfect! And the fish was fresh and pink. Breathtaking.

 I cooked the tortillas for a few minutes on each side.. to cook thru- but not too long or it will get too crispy. Unless that’s what you like. When the bubbles start to form flip over and repeat. Then set on a paper towel to drain.

*sigh* Fresh cilantro from my garden. Its tasty and delicious. I am so excited I grew it myself. Chop and put it into 1 cup of sour cream. Then add a splash of lime juice, salt and pepper to taste.
 

 I pan fried my Tilapia filets and seasoned them with salt and pepper. Cook the fish just until the flesh flakes with a fork.

 I grew 3 types of green beans this year.. to add color and zest to my garden and plate…. but unfortunately when I steamed the purple beans, they turned green! My heart was crushed. I really wanted purple.

And the finished product… served with fresh limes and perfect for a hot Indian Summer evening.
