Roasted Tomato Soup

This recipe is so simple, it should be illegal. I made it in less than 15 minutes. Start to finish. That’s the kind of lunch or dinner I like.

Or if you are a dipper like me, you can dip your garlic toast. Croutons would be tasty on top too…

Roasted Tomato Soup
1/2 cup diced onion
1 tbsp. dried basil
Salt and pepper to taste
1 tbsp. olive oil
2 cups roasted diced tomatoes, with juices
4 cups tomato sauce
Sour cream for garnish
Garlic toast

Saute your onions and seasonings in the olive oil until tender, about 5 minutes. Add tomatoes and tomato sauce and heat through. Serve with a dollop of sour cream and garlic toast. Even a grilled cheese sandwich! Perfect for a cold, rainy day lunch or light dinner.
