One of my favorite cupcake recipes for fall.

1 box spice cake mix
2 teaspoons vanilla
1 teaspoon cinnamon
½ cup oil
2 Granny Smith apples, cut into ½” pieces, skins on
Mix together cake mix, eggs, vanilla, cinnamon and oil. Batter will be thick. Add apples and beat for 2-3 minutes on medium speed. Batter will thin out somewhat.
Pour batter into paper liners to ¾ full. Bake at 350 for 18-20 minutes until the cake springs back when lightly touched. Remove from oven and cool completely on a wire rack. Frost once cooled. Drizzle with caramel sauce if desired.
