Nutella Cupcakes (NEW)

Okay. First I must state my disclaimer for this recipe. I wasn’t my favorite of the bunch- but it was the favorite of many of you who tasted it for me. I think it’s because I don’t love the flavor of hazelnuts. But don’t tell anyone. And for those of you who do love hazelnuts and chocolate…..

Nice. Right? A chocolate cupcake stuffed with Nutella, topped with Hazelnut Butter Cream frosting and drizzled with chocolate ganache.

Nutella Cupcakes (NEW)

1 dark chocolate cake mix
3 eggs
1 cup milk
1 tsp. vanilla extract
1 recipe Hazelnut Butter Cream frosting (below)
1 1/4 cup Nutella spread

Mix together chocolate cake mix, eggs, milk, and vanilla extract. Scoop into paper liners, filling 3/4 full. Bake at 350 degrees for 15 minutes, until cake springs back when lightly touched.

Remove from the oven, and cool. Scoop out the top with a knife or small spoon- making room for the Nutella filling. Place 1-2 tbsp. Nutella spread in each cupcake, then place the top of the cupcake back on, firmly pressing into place. The top with your Hazelnut Butter Cream frosting, and drizzle with ganache.

Hazelnut Butter Cream frosting (NEW)

8 tablespooons (1 stick) butter, room temperature
3 ¾ cups powdered sugar, sifted
3-4 tablespoons milk or cream
1 cup Nutella
1/4 cup cocoa
2 teaspoons vanilla extract
Place the butter in a large mixing bowl. Beat until light and fluffy, about 30 seconds.
Stop the mixer before adding the sugar or you will have a large mess to clean up. Add

the sugar, 3 tablespoons milk (cream), cocoa, Nutella,  and vanilla extract. Beat frosting starting on

slow increasing your speed until frosting is nice and creamy. Add  2-3 more

tablespoons of milk (cream) if frosting to too thick.
