Good grief. Let’s face it- cupcakes are and will always be dear to me. I started my baking/cookbook journey with cupcakes… and I’m still crazy about a good cupcake. I do believe this is one of those crazy cupcakes…. but oh, so good.
I realize it’s not for everyone- and that’s OK.
But for me, it’s pretty fantastic.
I hope you will enjoy it as much as I did. I’ve eaten 3 so far…. then gave the rest away- quickly.
Double Chocolate Ganache Bacon Cupcake (NEW)
1 dark chocolate cake mix
1/4 tsp. kosher salt
4 egg yolks
3 tbsp. cocoa powder (plus more for garnish)
1 1/2 cups heavy cream
1 tsp. vanilla
6 strips of bacon, cooked and cut into chunks for garnish
Mix together all ingredients until a thick batter forms- and is just combined. Do not over mix this recipe. Scoop batter into paper liners filling 3/4 full. Bake cupcakes for 12-15 minutes at 350 degrees until cake springs back when lightly touched. These cupcakes should still be somewhat soft…. cool completely before frosting with chocolate ganache. Dust with cocoa and top with a piece of cooled bacon.
