I bought some pistachios and now I’m thinking of all these wonderful ways to bake and make desserts with them. These cookies brought me my 4th wedding proposal- my husband was sitting next to me, and I was at church. Apparently what they say is true. The way to a man’s heart, IS through his stomach. White Chocolate Pistachio Cookies (NEW)
1/2 cup butter, soft
1/2 cup brown sugar
1/2 cup sugar
1 tsp. pistachio oil (or vanilla if you don’t have the pistachio oil)
1 tsp. baking powder
1/2 tsp. baking soda
2 1/2 cup flour
1 cup Craisins
1 cup white chocolate chips
1/2 cup plus 2 tbsp. chopped pistachio nuts without shells
Cream your butter and sugar until light and fluffy. Add eggs, and oil or vanilla. Mix until just combined. Add your soda and baking powder- then the flour, 1/2 cup at a time, until dough is formed. Fold in the Craisins, white chocolate and nuts. Shape with your cookie scoop (medium) into balls, then place in the freezer for 20 minutes. Place the chilled cookie balls onto a baking sheet, 2″ apart and bake at 350 degrees for 10-12 minutes, or until the tops are slightly golden. Remove from the oven and cool completely on a wire rack.
