I had these left over potatoes (never happens) and some Chorizo sausage in my freezer- so I decided to make a quick hash. My kids wanted eggs- I however just wanted a vegetable so a compromise came about. It was delicious. We ate every single bite! So full of flavor, and the crispy potato edges! Say not more. My favorite part!
4 large baking potatoes, baked and cooled, skin on
1 lb. Chorizo sausage, diced
1/2 medium sweet onion diced
1 tsp. olive oil
Salt and pepper to taste
In a large skillet, cook your diced onion in olive oil until tender, then add your sausage. Gently cook, over medium heat until browned, then add the potato and toss. The flavors of the sausage will season your potatoes, trust me. Cook the hash until the potatoes have heated through, and the edges become a little crispy. Serve hot. Makes 6 servings.
